Halloween Mashed Potatoes
     This was actually a totally unexpected surprise.  I was boiling potatoes to make pierogies and had a couple of extra carrots in the fridge.  I decided to throw them in the water too.  It was a mash potato melting pot that started with many purple potatoes.  A couple of days later when I pulled the potatoes out of the fridge and began mashing them I immediately thought of halloween when I saw the color.


2 lbs purple potatoes
3 small russet potatoes
2 large carrots
1 c shredded cheddar 
1/4 stick of butter
1 tbs salt
1tbs garlic powder
1 tbs extra virgin olive oil


1.  Boil potatoes for about 15 min or until fork tender.  Drain and allow to cool to warm.  Transfer to a food processor in small batches and pulse until desired consistency.


2.  Mix in cheddar, garlic powder, and salt.  Melt butter in microwave for about 20 seconds in a coffee mug.  Pour over potatoes and mix in.  Reheat if necessary before serving (can refrigerate up to 5 days). Enjoy!
